On the board, the Chef gives free rein to his talent and imagination, magnifying seasonal products and regional cuisine.
Discover through his dishes the marriage of tastes perfectly balanced between earth and sea, where local products are subtly combined with marine products, finely spiced with exotic ingredients…

His starter of mackerel, smoked eel and Bigorre bacon, accompanied by artichoke barigoule, tomato water and mango vinegar is a perfect example.
We enjoy the smoked sweetbread with vine shoots, herb juice and roasted fennel with lemon.

Master in the art of cooking fish, we continue with his delicious smoked cod with hay, eggplant, black olives and spring onions, avocado and creamy mushrooms.

But also his Squid a la plancha, tomato purée and grilled zucchini, spinach with semi-salted butter and green crab juice.

To accompany these dishes, a prestigious wine list with more than 180 references of Grands Crus will delight lovers of fine wines. We offer an impressive selection of wines from all the terroirs of Bordeaux, but also from other French wine regions (Rhône, Provence, Loire, Alsace…), and from abroad, as well as a beautiful range of wines by the glass.
